Recipes are not something you will see on here too often but these overnight oats were so good I had to share. 2 parts oats, 2 parts collagen creamer powder, lots of cinnamon and some unsweetened almond milk turned out to be an explosion of deliciousness in a mason jar. I don’t want to be one of those bloggers who chats for hours before sharing it 😉
Overnight Oats Recipe Ingredients
2 cups of rolled oats – I used Bob’s Red Mill Organic Oats because well, Bob is a trusted producer of flour, oats and other grains
2 cups of almond milk – Califa Farms Unsweetened Almond Milk has been my go-to almond milk for a few reasons: low sugar, no carageenan, great taste, lots of vitamin D
Lots of cinnamon – I use a zester like this one
2 scoops of Vanilla Collagen Creamer – Vital Proteins has been my go-to for collagen peptides. After using their collagen peptides for some time, I decided to add their collagen creamer into my coffee and have been looking for other ways to incorporate into other food. I tried a banana bread recipe which turned out to be a too-moist, flat pan of goop. If I do share a bread recipe one day just know it definitely took MULTIPLE iterations and trial and error (mostly error).
1 packet of Truvia for some added sweetness (totally optional)
Throw all the ingredients in a mason jar.. seal shut..refrigerate and enjoy the next day!
Great on-the-go option
I do think this overnight oats recipe would be a great option for on-the-go travel. I would make this overnight and take it in a portable container for a healthy airport breakfast. I’ve done some searching on how long the oats would last. If it’s the winter I would argue that this could last in your rental car until you get to the hotel to refrigerate in your room. Or, you could switch out the almond milk for water if it a bit more warmer. If it is really warm I wouldn’t leave this out non-refrigerated for more than a full work day. Use your judgement based on temperature and where you will be. I had a colleague who took chicken and rice in a Tupperware. We were in meetings all day but her food stayed put given it was 25 degrees out and she left it in the car. If you’re not traveling, take it to the office, store in the refrigerator and enjoy all week if you’re not traveling.
